In the end I had to reinstall Outlook, because of course there is no simple solution to these things

After uninstalling, I noticed that you can't "just install" Outlook on a corporate MacBook, apparently

It was wrong, of course. But the second attempt gave me a link that worked. I'm pretty sure that link was forbidden knowledge

Of course you can't download only Outlook, you have to download the whole office suite

But by some magic, Outlook just reinstalled itself while I was waiting for the download to finish(??)
